Savory Zucchini Cheese Bread
Ingredients
- 1½ cups grated zucchini (squeeze out moisture)
- 2 cups all‑purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup buttermilk (or milk with 1 tsp vinegar)
- 1 large egg
- 3 tbsp melted butter
- 1½ cups cheddar cheese
- 2–4 diced jalapeƱos (optional)
Instructions
- Preheat oven to 350°F. Grease a loaf pan.
- Mix dry ingredients: flour, baking powder, baking soda, salt.
- In another bowl, whisk egg, buttermilk, and butter.
- Add wet ingredients to dry. Fold in zucchini, cheese, and jalapeƱos.
- Pour into loaf pan. Bake 55–60 minutes until golden and cooked through.
- Cool before slicing.
