Zucchini Boats
Ingredients
- 4 medium zucchinis, halved & scooped out
- 1 lb ground beef
- 1 cup tomato sauce
- 1 cup shredded cheese (mozza, cheddar, or parmesan)
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper
- 1 onion, diced
- 2 garlic cloves, minced
Instructions
- Preheat oven to 375°F.
- Slice zucchinis in half lengthwise and scoop out the center.
- Lightly brush with olive oil and place on a baking sheet.
- Pre‑bake zucchini boats for 5–7 minutes to soften slightly.
- In a skillet over medium heat, add olive oil and sauté diced onion.
- Add garlic and cook another 30 seconds.
- Add ground beef and cook until browned.
- Drain excess fat, then stir in tomato sauce and seasonings. Simmer 5 minutes.
- Spoon mixture into the zucchini boats and sprinkle cheese over top.
- Bake for 15 minutes or until cheese is melted and bubbly.
- Garnish with fresh herbs like basil or parsley.
