Zucchini Boats

Ingredients

  • 4 medium zucchinis, halved & scooped out
  • 1 lb ground beef
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozza, cheddar, or parmesan)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt & pepper
  • 1 onion, diced
  • 2 garlic cloves, minced

Instructions

  1. Preheat oven to 375°F.
  2. Slice zucchinis in half lengthwise and scoop out the center.
  3. Lightly brush with olive oil and place on a baking sheet.
  4. Pre‑bake zucchini boats for 5–7 minutes to soften slightly.
  5. In a skillet over medium heat, add olive oil and sauté diced onion.
  6. Add garlic and cook another 30 seconds.
  7. Add ground beef and cook until browned.
  8. Drain excess fat, then stir in tomato sauce and seasonings. Simmer 5 minutes.
  9. Spoon mixture into the zucchini boats and sprinkle cheese over top.
  10. Bake for 15 minutes or until cheese is melted and bubbly.
  11. Garnish with fresh herbs like basil or parsley.
