Apple Energy Bites

Ingredients

  • ½ cup creamy nut butter (peanut, almond, or soy)
  • 1 medium apple, diced (about 1 cup)
  • 1 tbsp lemon juice
  • 1½ cups rolled oats (quick or old‑fashioned)
  • 1 tbsp honey
  • ½ tsp cinnamon

Instructions

  1. Dice the apple and toss with lemon juice.
  2. Soften nut butter in the microwave for about 20 seconds.
  3. In a bowl, combine apple, lemon juice, nut butter, oats, honey, and cinnamon.
  4. Mix until evenly combined.
  5. Lightly spray hands with cooking spray and roll mixture into small balls (about 20).
  6. Store in an airtight container in the refrigerator for up to 4 days.
