Asparagus & Lemon Garlic Chicken

Ingredients

  • 4 medium chicken breasts
  • 1 tbsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup onion, minced
  • 3–4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • 1/4 cup Parmesan cheese
  • 1 lb asparagus, trimmed and cut into thirds

Instructions

  1. Season chicken with Italian seasoning, red pepper flakes, salt, and pepper.
  2. Add oil to a large skillet over medium heat. Cook chicken 5–6 minutes per side, then remove and set aside.
  3. Add butter, onion, and asparagus to the skillet. Cook for 2–3 minutes until asparagus is tender.
  4. Add garlic and cook for just under 1 minute.
  5. Add heavy cream, lemon juice, and Parmesan; stir to combine.
  6. Return chicken to the pan and simmer 3–4 minutes until sauce thickens.
  7. Taste and adjust seasoning. If sauce becomes too thick, add 1/4 cup water, chicken stock, or broth.
