Baked Feta Eggs

Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 8 oz feta cheese
  • 4 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 1 tsp sea salt
  • 1 cup baby spinach
  • 4 large eggs
  • Optional toppings: fresh chives or basil

Instructions

  1. Preheat oven to 400°F.
  2. In a baking dish or four ramekins, layer tomatoes, bell pepper, red onion, garlic, and feta.
  3. Drizzle with olive oil, then sprinkle oregano, thyme, pepper, salt, and red pepper flakes.
  4. Bake for 25 minutes, then stir in spinach.
  5. Create four wells in the veggie‑feta mixture and crack an egg into each well.
  6. Return to oven and bake 10 minutes, until egg whites are set.
  7. Garnish with herbs and serve.
