Baked Feta Eggs
Ingredients
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 8 oz feta cheese
- 4 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp black pepper
- ½ tsp red pepper flakes
- 1 tsp sea salt
- 1 cup baby spinach
- 4 large eggs
- Optional toppings: fresh chives or basil
Instructions
- Preheat oven to 400°F.
- In a baking dish or four ramekins, layer tomatoes, bell pepper, red onion, garlic, and feta.
- Drizzle with olive oil, then sprinkle oregano, thyme, pepper, salt, and red pepper flakes.
- Bake for 25 minutes, then stir in spinach.
- Create four wells in the veggie‑feta mixture and crack an egg into each well.
- Return to oven and bake 10 minutes, until egg whites are set.
- Garnish with herbs and serve.
