Baked Feta Potatoes
Ingredients
- 4 medium potatoes (about 2 lbs)
- 8 oz block feta cheese
- 4 cloves fresh garlic, minced
- 3 tbsp extra‑virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F. Lightly spray a baking dish with nonstick cooking spray.
- Wash and scrub potatoes thoroughly. Cut into halves or quarters, making sure pieces are similar size for even cooking.
- In a large bowl, toss potato pieces with olive oil, minced garlic, salt, and pepper until evenly coated.
- Place seasoned potatoes in the baking dish and nestle chunks of feta cheese among them.
- Bake for 30–35 minutes, until potatoes are golden brown and fork‑tender.
- Remove from oven and allow to cool slightly before serving.
