Baked Feta Potatoes

Ingredients

  • 4 medium potatoes (about 2 lbs)
  • 8 oz block feta cheese
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra‑virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Lightly spray a baking dish with nonstick cooking spray.
  2. Wash and scrub potatoes thoroughly. Cut into halves or quarters, making sure pieces are similar size for even cooking.
  3. In a large bowl, toss potato pieces with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Place seasoned potatoes in the baking dish and nestle chunks of feta cheese among them.
  5. Bake for 30–35 minutes, until potatoes are golden brown and fork‑tender.
  6. Remove from oven and allow to cool slightly before serving.
