Blueberry Compote French Toast

Ingredients

French Toast:

  • 4 slices Brioche bread (regular bread is fine)
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 2 tbsp unsalted butter

Blueberry Compote:

  • 1 cup blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.
  2. Dip the brioche slices into the custard mixture, coating them fully.
  3. Heat a skillet over medium heat and melt the butter until bubbly.
  4. Cook the brioche slices for 3–4 minutes per side, until golden.
  5. Make the blueberry compote: combine blueberries, sugar, and lemon juice in a small saucepan. Heat until bubbly and thickened.
  6. Serve the warm French toast topped with blueberry compote.
