Blueberry Compote French Toast
Ingredients
French Toast:
- 4 slices Brioche bread (regular bread is fine)
- 2 large eggs
- 1 cup milk
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 2 tbsp unsalted butter
Blueberry Compote:
- 1 cup blueberries
- ¼ cup sugar
- 1 tbsp lemon juice
Instructions
- In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.
- Dip the brioche slices into the custard mixture, coating them fully.
- Heat a skillet over medium heat and melt the butter until bubbly.
- Cook the brioche slices for 3–4 minutes per side, until golden.
- Make the blueberry compote: combine blueberries, sugar, and lemon juice in a small saucepan. Heat until bubbly and thickened.
- Serve the warm French toast topped with blueberry compote.
