Blueberry Lemon Cookies
Ingredients
Wet
- 2 eggs
- 2 tbsp oil
- 1/3 cup sugar
- 1 tsp vanilla extract
- 2 tbsp lemon extract
- 4 tbsp honey
- 1 cup butter, softened
- 2 tbsp lemon juice
Dry
- 2½ cups flour + 1 tbsp to coat berries
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tbsp lemon zest
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F.
- Mix sugar, butter, and honey until light and fluffy.
- Beat in eggs, vanilla, lemon extract, oil, and lemon juice until semi-smooth (it may look a little curdled — it’s fine).
- Toss blueberries with 1 tbsp flour to prevent sinking.
- In another bowl, combine flour, salt, baking soda, baking powder, and lemon zest.
- Slowly mix dry ingredients into wet until just combined.
- Gently fold in blueberries.
- Drop spoonfuls onto a parchment-lined baking sheet.
- Bake 9–10 minutes until bottoms are golden brown.
