Blueberry Lemon Cookies

Ingredients

Wet

  • 2 eggs
  • 2 tbsp oil
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon extract
  • 4 tbsp honey
  • 1 cup butter, softened
  • 2 tbsp lemon juice

Dry

  • 2½ cups flour + 1 tbsp to coat berries
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F.
  2. Mix sugar, butter, and honey until light and fluffy.
  3. Beat in eggs, vanilla, lemon extract, oil, and lemon juice until semi-smooth (it may look a little curdled — it’s fine).
  4. Toss blueberries with 1 tbsp flour to prevent sinking.
  5. In another bowl, combine flour, salt, baking soda, baking powder, and lemon zest.
  6. Slowly mix dry ingredients into wet until just combined.
  7. Gently fold in blueberries.
  8. Drop spoonfuls onto a parchment-lined baking sheet.
  9. Bake 9–10 minutes until bottoms are golden brown.
