Cajun Potato Soup

Ingredients

  • 1 sliced hot sausage (or any smoked sausage)
  • 1 tbsp oil
  • 1 onion, diced
  • ½ cup celery, diced
  • ½ bell pepper, diced
  • 2 tsp minced garlic
  • 1 tsp Cajun seasoning
  • ½ tsp each: salt, black pepper, paprika
  • Pinch of cayenne (optional)
  • 4 cups chicken broth
  • 4 large potatoes, cubed
  • ½ cup heavy cream
  • 1 cup shredded cheese
  • Parsley for garnish

Instructions

  1. Heat oil in a large pot. Cook sausage slices until browned (3–4 minutes). Remove and set aside.
  2. In the same pot, sauté onion, celery, and bell pepper until soft (5–8 minutes).
  3. Add garlic and cook 1 minute.
  4. Add Cajun seasoning, spices, broth, and potatoes. Bring to a simmer and cook until potatoes are tender (20–25 minutes).
  5. Return sausage to the pot. Stir in cream and cheese. Simmer 5 minutes until creamy.
  6. Garnish with parsley and enjoy!
