Cajun Potato Soup
Ingredients
- 1 sliced hot sausage (or any smoked sausage)
- 1 tbsp oil
- 1 onion, diced
- ½ cup celery, diced
- ½ bell pepper, diced
- 2 tsp minced garlic
- 1 tsp Cajun seasoning
- ½ tsp each: salt, black pepper, paprika
- Pinch of cayenne (optional)
- 4 cups chicken broth
- 4 large potatoes, cubed
- ½ cup heavy cream
- 1 cup shredded cheese
- Parsley for garnish
Instructions
- Heat oil in a large pot. Cook sausage slices until browned (3–4 minutes). Remove and set aside.
- In the same pot, sauté onion, celery, and bell pepper until soft (5–8 minutes).
- Add garlic and cook 1 minute.
- Add Cajun seasoning, spices, broth, and potatoes. Bring to a simmer and cook until potatoes are tender (20–25 minutes).
- Return sausage to the pot. Stir in cream and cheese. Simmer 5 minutes until creamy.
- Garnish with parsley and enjoy!
