Caramel Apple Upside Down Cake

Topping Ingredients

  • 2 apples, sliced thin & peeled
  • 1 tsp cinnamon
  • ⅔ cup brown sugar
  • ¼ cup butter

Cake Ingredients

  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 cups brown sugar
  • 1 cup butter (soft)
  • 2½ cups flour
  • ¼ cup cornstarch
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 2 tsp cinnamon
  • 2 tsp ginger
  • ½ tsp nutmeg

Instructions

  1. Preheat oven to 350°F and grease a 9×13 pan.

Make the topping:

  1. Melt butter and brown sugar in a pot.
  2. Pour into pan and layer apple slices on top. Sprinkle with cinnamon.

Make the batter:

  1. Beat butter and sugar until fluffy.

  2. Add eggs and vanilla.

  3. Whisk dry ingredients in a separate bowl. Add to wet mixture, alternating with milk.

  4. Spread batter over apples.

  5. Bake 40–45 minutes or until a toothpick comes out clean.

  6. Let cool 10–15 minutes, then flip onto a platter.

Serve warm with whipped cream, caramel drizzle, or vanilla ice cream
