Caramelized Pineapple Chicken
Ingredients
- 1½ lbs boneless, skinless chicken thighs
- 1 tsp garlic powder
- ½ tsp onion powder
- 2 cups pineapple chunks
- Fresh parsley for garnish
- ½ cup soy sauce
- ¼ cup packed brown sugar
- 1 tbsp cornstarch
- ¼ tsp red pepper flakes
- 2 tbsp cooking oil
- 2 tbsp rice vinegar
- 10 tbsp water
Instructions
- Pat chicken dry and season with garlic and onion powder.
- Sear chicken in oil until browned on both sides; set aside.
- In the same pan, caramelize pineapple chunks.
- Stir in soy sauce, brown sugar, rice vinegar, pepper flakes, and water.
- Mix cornstarch with a little water and add to pan. Cook until sauce thickens.
- Return chicken to pan and simmer until cooked through.
- Garnish with parsley. Serve over rice or roasted vegetables.
