Caramelized Pineapple Chicken

Ingredients

  • 1½ lbs boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 2 cups pineapple chunks
  • Fresh parsley for garnish
  • ½ cup soy sauce
  • ¼ cup packed brown sugar
  • 1 tbsp cornstarch
  • ¼ tsp red pepper flakes
  • 2 tbsp cooking oil
  • 2 tbsp rice vinegar
  • 10 tbsp water

Instructions

  1. Pat chicken dry and season with garlic and onion powder.
  2. Sear chicken in oil until browned on both sides; set aside.
  3. In the same pan, caramelize pineapple chunks.
  4. Stir in soy sauce, brown sugar, rice vinegar, pepper flakes, and water.
  5. Mix cornstarch with a little water and add to pan. Cook until sauce thickens.
  6. Return chicken to pan and simmer until cooked through.
  7. Garnish with parsley. Serve over rice or roasted vegetables.
