Carrot & Apple Slaw
Ingredients
Slaw:
- 2 apples, cored and sliced thinly
- 2 carrots, peeled and shredded
- ¼ cup chopped nuts (walnuts, pecans, or almonds), toasted
- 2 tbsp fresh herbs (parsley or cilantro), chopped
- Optional: ¼ cup raisins or dried cranberries
Creamy Citrus Dressing:
- ½ cup plain yogurt
- 2 tbsp lemon juice
- 1 tbsp honey
- Pinch of salt
- Optional: pinch of cayenne pepper or chili flakes
Instructions
- Wash/peel carrots and shred finely. Slice apples into thin matchsticks or small bite‑size pieces (skin on is okay). Toss apples and carrots together.
- In a small bowl, whisk yogurt, lemon juice, honey, and salt until smooth and creamy. Add cayenne or chili if you want a spicy kick.
- Pour dressing over apple‑carrot mixture and toss gently to coat.
- Fold in toasted nuts and fresh herbs.
- Add raisins or cranberries if desired.
- Toss lightly to combine and serve.
