Carrot & Apple Slaw

Ingredients

Slaw:

  • 2 apples, cored and sliced thinly
  • 2 carrots, peeled and shredded
  • ¼ cup chopped nuts (walnuts, pecans, or almonds), toasted
  • 2 tbsp fresh herbs (parsley or cilantro), chopped
  • Optional: ¼ cup raisins or dried cranberries

Creamy Citrus Dressing:

  • ½ cup plain yogurt
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • Pinch of salt
  • Optional: pinch of cayenne pepper or chili flakes

Instructions

  1. Wash/peel carrots and shred finely. Slice apples into thin matchsticks or small bite‑size pieces (skin on is okay). Toss apples and carrots together.
  2. In a small bowl, whisk yogurt, lemon juice, honey, and salt until smooth and creamy. Add cayenne or chili if you want a spicy kick.
  3. Pour dressing over apple‑carrot mixture and toss gently to coat.
  4. Fold in toasted nuts and fresh herbs.
  5. Add raisins or cranberries if desired.
  6. Toss lightly to combine and serve.
