Carrot Cake Bars

Ingredients

Bars:

  • 1½ cups all‑purpose flour
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 2 large eggs (room temp)
  • ½ cup melted butter
  • 2 cups shredded carrots
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Frosting:

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. Whisk together flour, sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Create a well and add eggs and melted butter. Mix until smooth.
  4. Fold in shredded carrots.
  5. Pour batter into the pan and spread evenly.
  6. Bake 25–30 minutes or until a toothpick comes out clean.
  7. For frosting: beat cream cheese and butter until smooth. Add powdered sugar gradually and mix until fluffy. Stir in vanilla.
  8. Allow bars to cool completely before frosting.
  9. Cut into squares and serve.
