Carrot Cake Bars
Ingredients
Bars:
- 1½ cups all‑purpose flour
- 1 cup sugar
- ½ cup brown sugar
- 1 tsp baking powder
- 2 large eggs (room temp)
- ½ cup melted butter
- 2 cups shredded carrots
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
Frosting:
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking pan.
- Whisk together flour, sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- Create a well and add eggs and melted butter. Mix until smooth.
- Fold in shredded carrots.
- Pour batter into the pan and spread evenly.
- Bake 25–30 minutes or until a toothpick comes out clean.
- For frosting: beat cream cheese and butter until smooth. Add powdered sugar gradually and mix until fluffy. Stir in vanilla.
- Allow bars to cool completely before frosting.
- Cut into squares and serve.
