Cheesy Vegetable Casserole
Ingredients
- 4 cups mixed vegetables (broccoli, cauliflower, carrots, squash, etc.)
- 1 (10–12 oz) can cream of mushroom soup
- ¾ cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup diced onion
- 1 sleeve Ritz crackers, crushed
- ¼ cup melted butter
Instructions
- Preheat oven to 350°F.
Mix filling:
- Combine mixed vegetables, cream of mushroom soup, sour cream, shredded cheddar, and onion.
- Spread the mixture into a greased casserole dish.
Make topping:
Mix crushed crackers with melted butter until well coated.
Sprinkle topping evenly over the casserole.
Bake 30–35 minutes, until bubbly and golden.
