Chocolate Avocado Muffins
Ingredients
Dry Ingredients
- ¾ cup cocoa powder
- 1½ tsp baking soda
- ¾ tsp baking powder
- ⅜ tsp salt
- 1¾ cups flour
Wet Ingredients
- 3 large eggs
- ¾ cup milk
- 1½ cups mashed avocado (about 1 medium)
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1½ tsp vanilla extract
Add‑Ins
- ¾ cup chocolate chips + some extra for topping
Instructions
- Preheat oven to 350°F and line a muffin pan with paper liners.
- Whisk all dry ingredients together in a small bowl.
- In a large bowl, whisk all wet ingredients until smooth and sugar is dissolved.
- Add the dry mixture to the wet mixture and stir to combine.
- Fold in the chocolate chips.
- Divide batter evenly into the muffin cups and sprinkle more chocolate chips on top.
- Bake for 24–26 minutes or until a toothpick inserted in the middle comes out clean.
- Cool the muffins on a wire rack before serving.
Tip:
To keep muffins moist and fudgy, avoid overbaking.
