Chocolate Avocado Muffins

Ingredients

Dry Ingredients

  • ¾ cup cocoa powder
  • 1½ tsp baking soda
  • ¾ tsp baking powder
  • ⅜ tsp salt
  • 1¾ cups flour

Wet Ingredients

  • 3 large eggs
  • ¾ cup milk
  • 1½ cups mashed avocado (about 1 medium)
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1½ tsp vanilla extract

Add‑Ins

  • ¾ cup chocolate chips + some extra for topping

Instructions

  1. Preheat oven to 350°F and line a muffin pan with paper liners.
  2. Whisk all dry ingredients together in a small bowl.
  3. In a large bowl, whisk all wet ingredients until smooth and sugar is dissolved.
  4. Add the dry mixture to the wet mixture and stir to combine.
  5. Fold in the chocolate chips.
  6. Divide batter evenly into the muffin cups and sprinkle more chocolate chips on top.
  7. Bake for 24–26 minutes or until a toothpick inserted in the middle comes out clean.
  8. Cool the muffins on a wire rack before serving.

Tip:

To keep muffins moist and fudgy, avoid overbaking.
