Citrus Shortbread Cookies

Ingredients

  • Zest of 2 lemons
  • Zest of 2 oranges
  • 2 cups all‑purpose flour
  • 1 cup granulated sugar
  • ¾ cup powdered sugar
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • 1 cup unsalted butter, softened

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment.
  2. Cream butter with granulated and powdered sugar until light and fluffy.
  3. Add vanilla and citrus zests; mix well.
  4. Gradually add flour and salt; mix until a soft dough forms.
  5. Shape dough into small balls or roll into a log and slice into rounds.
  6. Place on baking sheet about 1 inch apart.
  7. Bake 12–15 minutes, until edges are lightly golden.
  8. Cool for 5 minutes, then transfer to a wire rack.

Optional: Dust with powdered sugar when cooled.
