Citrus Shortbread Cookies
Ingredients
- Zest of 2 lemons
- Zest of 2 oranges
- 2 cups all‑purpose flour
- 1 cup granulated sugar
- ¾ cup powdered sugar
- ¼ tsp salt
- 2 tsp vanilla extract
- 1 cup unsalted butter, softened
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment.
- Cream butter with granulated and powdered sugar until light and fluffy.
- Add vanilla and citrus zests; mix well.
- Gradually add flour and salt; mix until a soft dough forms.
- Shape dough into small balls or roll into a log and slice into rounds.
- Place on baking sheet about 1 inch apart.
- Bake 12–15 minutes, until edges are lightly golden.
- Cool for 5 minutes, then transfer to a wire rack.
Optional: Dust with powdered sugar when cooled.
