Delicata Squash Cheddar Fritters
Ingredients
- 1½ cups shredded delicata squash (peeled, seeds removed)
- 1 cup shredded cheddar cheese
- ¼ cup Parmesan cheese
- ½ cup flour
- ¼ cup milk
- 1 egg
- ½ tsp baking powder
- Salt & pepper
- Oil for frying (canola or avocado)
Instructions
- Prep squash: peel, remove seeds, shred with a grater. Blot with paper towel if very wet.
- In a bowl, combine milk, egg, flour, baking powder, salt, pepper, cheddar, and Parmesan.
- Add shredded squash and mix well.
- Heat about ¼ cup oil in a skillet over medium‑high heat.
- Drop spoonfuls of batter into the hot oil and flatten slightly.
- Fry 3–4 minutes per side until golden and crispy.
- Transfer to paper towels to drain.
- Serve warm with sour cream or your favorite dip.
Tip: Add cayenne or garlic powder for extra flavor.
