Delicata Squash Cheddar Fritters

Ingredients

  • 1½ cups shredded delicata squash (peeled, seeds removed)
  • 1 cup shredded cheddar cheese
  • ¼ cup Parmesan cheese
  • ½ cup flour
  • ¼ cup milk
  • 1 egg
  • ½ tsp baking powder
  • Salt & pepper
  • Oil for frying (canola or avocado)

Instructions

  1. Prep squash: peel, remove seeds, shred with a grater. Blot with paper towel if very wet.
  2. In a bowl, combine milk, egg, flour, baking powder, salt, pepper, cheddar, and Parmesan.
  3. Add shredded squash and mix well.
  4. Heat about ¼ cup oil in a skillet over medium‑high heat.
  5. Drop spoonfuls of batter into the hot oil and flatten slightly.
  6. Fry 3–4 minutes per side until golden and crispy.
  7. Transfer to paper towels to drain.
  8. Serve warm with sour cream or your favorite dip.

Tip: Add cayenne or garlic powder for extra flavor.
