Dragon Fruit Sriracha Shrimp

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup dragon fruit, diced
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Fresh cilantro for garnish (optional)
  • Juice of 1 lime

Instructions

Marinate Shrimp:

  1. Toss shrimp with lime juice, garlic, salt, and pepper. Let sit for 15 minutes.

Cook:

  1. Heat olive oil in a skillet over medium‑high heat.
  2. Cook shrimp 2–3 minutes per side, until pink and opaque.
  3. Stir in diced dragon fruit and Sriracha. Cook for 2 more minutes until heated through.

Serve:

  1. Garnish with cilantro.
  2. Serve over rice, quinoa, or enjoy as an appetizer.
