Fruit Pavlova

Ingredients

Meringue Base

  • 4 large egg whites
  • 1 cup sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar or lemon juice
  • 1 tsp vanilla extract

Topping

  • 1 cup heavy whipping cream
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 apple, thinly sliced
  • 1 orange, peeled & segmented
  • ½ grapefruit, peeled & segmented
  • Optional: zest of lime for garnish

Instructions

  1. Preheat oven to 250°F and line a baking sheet with parchment.
  2. Beat egg whites until soft peaks form.
  3. Gradually add sugar and beat until stiff and glossy.
  4. Gently fold in cornstarch, vinegar or lemon juice, and vanilla.
  5. Spoon the meringue onto the baking sheet in a circle with a dip in the center.
  6. Bake for 1 hour. Turn off oven and let cool inside with the door slightly open.
  7. Meanwhile, beat heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Once meringue is cool, top with whipped cream and arrange sliced apples, grapes, orange, and grapefruit.
  9. Sprinkle with lime zest if desired.
