Fruit Pavlova
Ingredients
Meringue Base
- 4 large egg whites
- 1 cup sugar
- 1 tsp cornstarch
- 1 tsp white vinegar or lemon juice
- 1 tsp vanilla extract
Topping
- 1 cup heavy whipping cream
- 1 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 apple, thinly sliced
- 1 orange, peeled & segmented
- ½ grapefruit, peeled & segmented
- Optional: zest of lime for garnish
Instructions
- Preheat oven to 250°F and line a baking sheet with parchment.
- Beat egg whites until soft peaks form.
- Gradually add sugar and beat until stiff and glossy.
- Gently fold in cornstarch, vinegar or lemon juice, and vanilla.
- Spoon the meringue onto the baking sheet in a circle with a dip in the center.
- Bake for 1 hour. Turn off oven and let cool inside with the door slightly open.
- Meanwhile, beat heavy cream with powdered sugar and vanilla until soft peaks form.
- Once meringue is cool, top with whipped cream and arrange sliced apples, grapes, orange, and grapefruit.
- Sprinkle with lime zest if desired.
