Gouda & Cabbage Bake

Ingredients

Filling:

  • 3 cups cabbage, finely shredded
  • ½ cup smoked gouda (or Havarti/Parmesan), shredded
  • 4 slices bacon, cooked and crumbled
  • 1 tbsp dill powder
  • 2 tsp thyme powder
  • 1 tsp sea salt

Crust:

  • 6 tbsp milk
  • ¼ cup sour cream
  • 2 eggs
  • ½ cup flour
  • ¼ tsp baking powder
  • ⅛ tsp baking soda
  • ¼ tsp sea salt

Instructions

  1. Preheat oven to 400°F. Lightly butter an 8‑inch cast‑iron skillet or baking dish.
  2. Fry bacon, crumble, and set aside.
  3. Mix cabbage, cheese, bacon, dill, thyme, and salt in a bowl. Spread mixture in skillet.
  4. Whisk milk, sour cream, and eggs. Stir in flour, baking powder, baking soda, and salt until smooth.
  5. Pour crust mixture evenly over the cabbage.
  6. Use a fork to gently lift cabbage so batter spreads.
  7. Bake 30 minutes, until center is set and top is golden brown.
  8. Sprinkle with extra dill and thyme before serving.
