Gouda & Cabbage Bake
Ingredients
Filling:
- 3 cups cabbage, finely shredded
- ½ cup smoked gouda (or Havarti/Parmesan), shredded
- 4 slices bacon, cooked and crumbled
- 1 tbsp dill powder
- 2 tsp thyme powder
- 1 tsp sea salt
Crust:
- 6 tbsp milk
- ¼ cup sour cream
- 2 eggs
- ½ cup flour
- ¼ tsp baking powder
- ⅛ tsp baking soda
- ¼ tsp sea salt
Instructions
- Preheat oven to 400°F. Lightly butter an 8‑inch cast‑iron skillet or baking dish.
- Fry bacon, crumble, and set aside.
- Mix cabbage, cheese, bacon, dill, thyme, and salt in a bowl. Spread mixture in skillet.
- Whisk milk, sour cream, and eggs. Stir in flour, baking powder, baking soda, and salt until smooth.
- Pour crust mixture evenly over the cabbage.
- Use a fork to gently lift cabbage so batter spreads.
- Bake 30 minutes, until center is set and top is golden brown.
- Sprinkle with extra dill and thyme before serving.
