Greek Lemon Potatoes

Ingredients

  • 3 lbs potatoes, peeled & cut into wedges
  • 3/4 cup olive oil
  • 5 cloves garlic, minced
  • Juice of 2 lemons
  • 3/4 cup vegetable stock
  • 2 tsp dried oregano
  • 1 tsp poultry seasoning
  • Salt and pepper to taste
  • 1/3 cup fresh parsley

Instructions

  1. Preheat your oven to 390°F.
  2. Peel and cut the potatoes into wedges.
  3. In a bowl, whisk together lemon juice, olive oil, garlic, poultry seasoning, vegetable broth, oregano, salt, and pepper.
  4. Place the potato wedges in a baking dish and pour the broth mixture over them. Toss to coat evenly.
  5. Bake for 40 minutes.
  6. Remove from the oven, flip the potatoes, and bake for another 40 minutes, until crispy and golden.
  7. Garnish with fresh parsley and serve immediately.
