Greek Lemon Potatoes
Ingredients
- 3 lbs potatoes, peeled & cut into wedges
- 3/4 cup olive oil
- 5 cloves garlic, minced
- Juice of 2 lemons
- 3/4 cup vegetable stock
- 2 tsp dried oregano
- 1 tsp poultry seasoning
- Salt and pepper to taste
- 1/3 cup fresh parsley
Instructions
- Preheat your oven to 390°F.
- Peel and cut the potatoes into wedges.
- In a bowl, whisk together lemon juice, olive oil, garlic, poultry seasoning, vegetable broth, oregano, salt, and pepper.
- Place the potato wedges in a baking dish and pour the broth mixture over them. Toss to coat evenly.
- Bake for 40 minutes.
- Remove from the oven, flip the potatoes, and bake for another 40 minutes, until crispy and golden.
- Garnish with fresh parsley and serve immediately.
