Green Goddess Sandwich

Ingredients

  • 2 slices hearty bread (whole wheat or sourdough)
  • ½ avocado, sliced
  • 4–6 cucumber slices
  • A handful of arugula or lettuce (or spinach)
  • 2 slices mozzarella or provolone
  • 2–3 tbsp Green Goddess dressing (store‑bought or homemade)

Instructions

  1. Toast bread if desired.
  2. Spread Green Goddess dressing on both slices.
  3. Layer avocado, cucumber, arugula, and mozzarella.
  4. Close sandwich, slice, and enjoy!
