Lemon Avocado Muffins
Ingredients
- 2 cups all‑purpose flour
- 1 tbsp cornstarch
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ ripe avocado, mashed
- 2 tbsp olive oil
- 1 cup sugar
- 1 tbsp honey
- 1 tsp lemon zest
- 4 tbsp lemon juice
- 1 tsp vanilla extract
- ¾ cup water
- 2 tsp poppy seeds
Glaze
- ½ cup powdered sugar
- 2–3 tsp lemon juice
Instructions
- Preheat oven to 350°F.
- Mix all dry ingredients in one bowl.
- In another bowl, mash avocado and whisk with sugar, oil, honey, lemon zest, lemon juice, and vanilla. Add water.
- Combine wet and dry ingredients; stir until just mixed.
- Divide batter into muffin cups.
- Bake 20–22 minutes. Cool completely.
- Mix powdered sugar and lemon juice to make glaze; drizzle over muffins.
Makes: 12 muffins
