Lemon Avocado Muffins

Ingredients

  • 2 cups all‑purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ ripe avocado, mashed
  • 2 tbsp olive oil
  • 1 cup sugar
  • 1 tbsp honey
  • 1 tsp lemon zest
  • 4 tbsp lemon juice
  • 1 tsp vanilla extract
  • ¾ cup water
  • 2 tsp poppy seeds

Glaze

  • ½ cup powdered sugar
  • 2–3 tsp lemon juice

Instructions

  1. Preheat oven to 350°F.
  2. Mix all dry ingredients in one bowl.
  3. In another bowl, mash avocado and whisk with sugar, oil, honey, lemon zest, lemon juice, and vanilla. Add water.
  4. Combine wet and dry ingredients; stir until just mixed.
  5. Divide batter into muffin cups.
  6. Bake 20–22 minutes. Cool completely.
  7. Mix powdered sugar and lemon juice to make glaze; drizzle over muffins.

Makes: 12 muffins
