Lemon Blackberry Cookies
Ingredients
- 2¾ cups all‑purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter, melted and cooled
- 1¼ cups sugar
- ¼ cup brown sugar, packed
- Zest of 2 lemons
- 2 tbsp fresh lemon juice
- 1 large egg (room temp)
- 1 egg yolk (room temp)
- 1 cup frozen blackberries, slightly thawed and broken up
Instructions
- Preheat oven to 350°F.
- Whisk flour, baking powder, baking soda, and salt.
- In another bowl, beat melted butter with sugars for 2 minutes.
- Mix in lemon zest, juice, egg, and yolk.
- Add dry ingredients and mix until just combined. Fold in blackberries.
- Line baking sheets with parchment.
- Let dough rest 10 minutes. Scoop 2 tbsp balls (6 per sheet).
- Bake 14–16 minutes until edges are golden.
- Cool 5 minutes on sheet, then transfer to rack.
