Lemon Blackberry Cookies

Ingredients

  • 2¾ cups all‑purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter, melted and cooled
  • 1¼ cups sugar
  • ¼ cup brown sugar, packed
  • Zest of 2 lemons
  • 2 tbsp fresh lemon juice
  • 1 large egg (room temp)
  • 1 egg yolk (room temp)
  • 1 cup frozen blackberries, slightly thawed and broken up

Instructions

  1. Preheat oven to 350°F.
  2. Whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat melted butter with sugars for 2 minutes.
  4. Mix in lemon zest, juice, egg, and yolk.
  5. Add dry ingredients and mix until just combined. Fold in blackberries.
  6. Line baking sheets with parchment.
  7. Let dough rest 10 minutes. Scoop 2 tbsp balls (6 per sheet).
  8. Bake 14–16 minutes until edges are golden.
  9. Cool 5 minutes on sheet, then transfer to rack.
