Mediterranean Vegetable Bake
Ingredients
- 3 medium potatoes, thinly sliced
- 2 onions, thinly sliced
- 2 bell peppers, sliced
- 3 tomatoes, sliced
- 1/2 cup olive oil (generous amount for authentic flavor)
- 2–3 cloves garlic, minced
- 1 tsp oregano
- Fresh parsley (optional)
- Salt and pepper to taste
Optional Add-ins:
- Feta cheese
- Olives for garnish
Instructions
- Preheat oven to 375°F.
- Layer vegetables in a baking dish: potatoes, onions, peppers, then tomatoes.
- Season each layer with salt, pepper, and oregano, then drizzle generously with olive oil.
- Add minced garlic between layers for extra flavor.
- Pour remaining olive oil on top.
- Cover with foil and bake 1 hour. Uncover and bake an additional 20–30 minutes until tender and slightly caramelized.
- Garnish with parsley, feta, or olives if desired.
- Serve with crusty bread or alongside grilled fish or chicken.
