One Pan Stir Fry

Ingredients

Main

  • 1 lb chicken breast or thighs, thinly sliced
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms
  • Handful of sweet peas
  • 1 medium carrot, julienned
  • 1 bell pepper, sliced
  • ½ small onion, sliced
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp cornstarch

Sauce

  • ½ cup chicken broth
  • ½ cup soy sauce
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes

Instructions

  1. Mix all sauce ingredients in a bowl.
  2. Heat oil in a skillet over medium‑high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
  3. Add onion, carrot, and bell pepper; cook 2–3 minutes.
  4. Add broccoli, zucchini, and mushrooms; cook 3–4 minutes.
  5. Return chicken to pan. Pour sauce over everything and toss.
  6. If thicker sauce is desired, stir in cornstarch slurry and cook 1–2 minutes.
  7. Serve over rice or noodles. Garnish with sesame seeds or green onions.
