One Pan Stir Fry
Ingredients
Main
- 1 lb chicken breast or thighs, thinly sliced
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- Handful of sweet peas
- 1 medium carrot, julienned
- 1 bell pepper, sliced
- ½ small onion, sliced
- 2 tbsp olive oil or avocado oil
- 1 tbsp cornstarch
Sauce
- ½ cup chicken broth
- ½ cup soy sauce
- 2 tbsp honey
- 2 tsp sesame oil
- 1 tbsp apple cider vinegar
- 1 tbsp grated ginger
- 3 cloves garlic, minced
- ½ tsp red pepper flakes
Instructions
- Mix all sauce ingredients in a bowl.
- Heat oil in a skillet over medium‑high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
- Add onion, carrot, and bell pepper; cook 2–3 minutes.
- Add broccoli, zucchini, and mushrooms; cook 3–4 minutes.
- Return chicken to pan. Pour sauce over everything and toss.
- If thicker sauce is desired, stir in cornstarch slurry and cook 1–2 minutes.
- Serve over rice or noodles. Garnish with sesame seeds or green onions.
