Pear & Cinnamon Muffins

Ingredients

Dry

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ¾ cup granulated sugar

Wet

  • 2 large eggs
  • ½ cup milk
  • ⅓ cup melted butter

Add-ins

  • 2 ripe pears, cubed

Topping

  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ cup melted butter

Instructions

  1. Preheat oven to 350°F. Line a muffin pan.
  2. In a bowl, whisk flour, baking powder, cinnamon, salt, and sugar.
  3. In another bowl, beat eggs and milk. Stir in melted butter.
  4. Fold in pears.
  5. Pour wet mixture into dry ingredients and gently mix until just combined (don’t overmix).
  6. Fill muffin cups ⅔ full.
  7. Bake 20–25 minutes, until golden and a toothpick comes out clean.

Topping

  1. Mix sugar and cinnamon.
  2. Brush warm muffins with melted butter and roll in cinnamon sugar.
  3. Serve warm!
