Roasted Garlic Mashed Potatoes

Ingredients

  • 2 lbs russet potatoes, peeled and cut into chunks
  • 1 head garlic
  • 2–3 tbsp olive oil
  • 4 tbsp butter
  • 1/2 cup milk or cream (room temp or warmed)
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Roast the garlic: Preheat oven to 400°F.
  2. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 40 minutes until soft and caramelized.
  3. Place potatoes in salted water and bring to a boil. Cook until tender, about 15–20 minutes. Drain well.
  4. Squeeze roasted garlic cloves from their skins and mash with potatoes.
  5. Add butter, roasted garlic, sour cream, and warm milk or cream. Mash until smooth and creamy.
  6. Season with salt and pepper. Garnish with herbs or extra butter if desired.
