Roasted Garlic Mashed Potatoes
Ingredients
- 2 lbs russet potatoes, peeled and cut into chunks
- 1 head garlic
- 2–3 tbsp olive oil
- 4 tbsp butter
- 1/2 cup milk or cream (room temp or warmed)
- 1/4 cup sour cream
- Salt and pepper to taste
Instructions
- Roast the garlic: Preheat oven to 400°F.
- Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 40 minutes until soft and caramelized.
- Place potatoes in salted water and bring to a boil. Cook until tender, about 15–20 minutes. Drain well.
- Squeeze roasted garlic cloves from their skins and mash with potatoes.
- Add butter, roasted garlic, sour cream, and warm milk or cream. Mash until smooth and creamy.
- Season with salt and pepper. Garnish with herbs or extra butter if desired.
