Roasted Purple Yams
Ingredients
- 2 lb purple yams, cut into 1" pieces
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme
- ¼ tsp dried oregano
- 2 tbsp parsley, chopped
- 2 tbsp basil, chopped
Instructions
- Preheat oven to 400°F.
- Mix garlic, oil, salt, pepper, paprika, thyme, and oregano.
- Toss with yams until coated.
- Spread on a parchment‑lined sheet, skin side up.
- Roast 20–25 minutes until tender.
- Broil 3 minutes to crisp edges.
- Sprinkle with parsley and basil. Enjoy immediately.
