Roasted Purple Yams

Ingredients

  • 2 lb purple yams, cut into 1" pieces
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme
  • ¼ tsp dried oregano
  • 2 tbsp parsley, chopped
  • 2 tbsp basil, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Mix garlic, oil, salt, pepper, paprika, thyme, and oregano.
  3. Toss with yams until coated.
  4. Spread on a parchment‑lined sheet, skin side up.
  5. Roast 20–25 minutes until tender.
  6. Broil 3 minutes to crisp edges.
  7. Sprinkle with parsley and basil. Enjoy immediately.
