Roasted Sausages with Cabbage & Kabocha Squash
Ingredients
- ½ Savoy cabbage, chopped
- 1 small Kabocha squash, cubed
- 1 onion, sliced
- 4 sausages (or chickpeas for a vegetarian option)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp mustard
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss the cabbage, squash, and onion with olive oil, salt, and pepper.
- Spread on a baking sheet and add the sausages.
- Roast for 30–35 minutes, until vegetables are golden and sausages are cooked through.
- Drizzle with a mixture of vinegar and mustard before serving.
