Roasted Sausages with Cabbage & Kabocha Squash

Ingredients

  • ½ Savoy cabbage, chopped
  • 1 small Kabocha squash, cubed
  • 1 onion, sliced
  • 4 sausages (or chickpeas for a vegetarian option)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the cabbage, squash, and onion with olive oil, salt, and pepper.
  3. Spread on a baking sheet and add the sausages.
  4. Roast for 30–35 minutes, until vegetables are golden and sausages are cooked through.
  5. Drizzle with a mixture of vinegar and mustard before serving.
