Roasted Veggie Pasta Sauce
Ingredients
- 4–5 ripe tomatoes
- 1 large onion
- 2 medium carrots
- 1–2 bell peppers
- 1–2 jalapeños
- 4–5 garlic cloves
- Optional: zucchini, eggplant, or cauliflower
- 2–3 tbsp olive oil
- Salt & pepper
- ½ tsp smoked paprika
- 1 tsp Italian seasoning
- ½–1 cup vegetable broth (or water)
- Fresh parsley for garnish
Instructions
- Chop tomatoes, onion, carrots, peppers, jalapeños, and garlic.
- Spread vegetables on a baking sheet. Drizzle with oil and season with salt, pepper, oregano, and paprika.
- Roast at 400°F for 25–30 minutes until tender.
- Purée vegetables with broth until smooth.
- Heat sauce 5–10 minutes. Adjust seasoning or add broth for thinner texture.
- Toss with pasta and garnish with parsley and Parmesan.
