Roasted Veggie Pasta Sauce

Ingredients

  • 4–5 ripe tomatoes
  • 1 large onion
  • 2 medium carrots
  • 1–2 bell peppers
  • 1–2 jalapeños
  • 4–5 garlic cloves
  • Optional: zucchini, eggplant, or cauliflower
  • 2–3 tbsp olive oil
  • Salt & pepper
  • ½ tsp smoked paprika
  • 1 tsp Italian seasoning
  • ½–1 cup vegetable broth (or water)
  • Fresh parsley for garnish

Instructions

  1. Chop tomatoes, onion, carrots, peppers, jalapeños, and garlic.
  2. Spread vegetables on a baking sheet. Drizzle with oil and season with salt, pepper, oregano, and paprika.
  3. Roast at 400°F for 25–30 minutes until tender.
  4. Purée vegetables with broth until smooth.
  5. Heat sauce 5–10 minutes. Adjust seasoning or add broth for thinner texture.
  6. Toss with pasta and garnish with parsley and Parmesan.
