Smashed Crispy Carrots
Ingredients
- 1 lb carrots (peeled)
- 2 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Salt & pepper to taste
- Optional: fresh herbs (thyme or parsley)
Instructions
- Preheat oven to 425°F.
- Boil carrots in salted water for 15–20 minutes until very tender.
- Drain and place on a baking sheet.
- Use a fork or glass to gently smash each carrot flat.
- Drizzle with olive oil and sprinkle with Parmesan, garlic powder, smoked paprika, salt, and pepper.
- Bake 10–15 minutes until edges are crispy.
- Garnish with herbs if desired. Serve with sour cream or ranch.
