Smashed Crispy Carrots

Ingredients

  • 1 lb carrots (peeled)
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt & pepper to taste
  • Optional: fresh herbs (thyme or parsley)

Instructions

  1. Preheat oven to 425°F.
  2. Boil carrots in salted water for 15–20 minutes until very tender.
  3. Drain and place on a baking sheet.
  4. Use a fork or glass to gently smash each carrot flat.
  5. Drizzle with olive oil and sprinkle with Parmesan, garlic powder, smoked paprika, salt, and pepper.
  6. Bake 10–15 minutes until edges are crispy.
  7. Garnish with herbs if desired. Serve with sour cream or ranch.
