Spaghetti Squash Bowl

Ingredients

  • 1 spaghetti squash
  • 1/2 lb mushrooms, sliced
  • 1 tomato, chopped
  • 1 cup kale, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half, remove seeds, and place cut‑side down on a baking sheet.
  3. Roast for 40 minutes.
  4. Scrape the cooked squash into strands using a fork.
  5. Sauté mushrooms, tomato, and kale in olive oil.
  6. Combine sautéed vegetables with squash strands and season to taste.
