Spaghetti Squash Bowl
Ingredients
- 1 spaghetti squash
- 1/2 lb mushrooms, sliced
- 1 tomato, chopped
- 1 cup kale, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cut the spaghetti squash in half, remove seeds, and place cut‑side down on a baking sheet.
- Roast for 40 minutes.
- Scrape the cooked squash into strands using a fork.
- Sauté mushrooms, tomato, and kale in olive oil.
- Combine sautéed vegetables with squash strands and season to taste.
