Spicy Honey Pickled Cabbage

Ingredients

  • 1 medium head of cabbage, shredded
  • 1 cup honey
  • 1 cup apple cider vinegar
  • 2 tbsp red pepper flakes
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 cup water

Instructions

  1. In a bowl, combine shredded cabbage and salt. Let sit 30 minutes to wilt.
  2. In a saucepan, combine honey, apple cider vinegar, water, red pepper flakes, and pepper. Bring to a boil.
  3. Remove from heat and let cool slightly.
  4. Pour mixture over wilted cabbage and mix well.
  5. Transfer to a jar, seal tightly, and refrigerate for 24 hours before serving.
  6. Keeps for up to 2 weeks. Great on tacos or sandwiches.
