When summer fruit is at its peak, the freezer is the easiest way to capture that fresh-picked flavor for the months ahead. Whether you're preserving strawberries, blueberries, raspberries, peaches, cherries, or plums, a little preparation goes a long way.

Keep Fresh Fruit Longer

Berries are delicate and can spoil quickly, but a simple vinegar wash helps reduce mold and extend freshness in the refrigerator.

Method:

  1. Mix 1 part white vinegar with 3 parts water.
  2. Gently swish berries in the solution for about a minute.
  3. Rinse thoroughly with cool water.
  4. Spread on a clean towel and dry completely.
  5. Store in a container lined with paper towel in the refrigerator.

Pro Tip: Remove any bruised or moldy fruit right away. One bad berry can spoil the whole batch.

Freezing Method

For most berries and fruits, the secret is freezing them individually first.

Berries: Remove stems, rinse gently, and dry thoroughly.

Stone Fruits (Peaches, Plums, Cherries): Wash, pit if needed, and slice into manageable pieces.

Spread fruit in a single layer on a parchment-lined baking sheet and freeze until solid. Transfer to freezer bags or containers, removing as much air as possible before sealing.
