Zoodle Vegetable Bake

Ingredients

  • 2 zucchini, spiralized into noodles
  • Broccoli crown (florets)
  • 10 sliced mushrooms or 5–6 large mushrooms
  • 2 bell peppers, sliced
  • 6–7 Campari tomatoes, quartered
  • ¼ cup olive oil
  • ½ cup butter
  • 3 cloves garlic, minced
  • ¼ cup tomato sauce
  • Fresh basil leaves
  • Mozzarella cheese slices
  • Salt, pepper, oregano

Instructions

  1. Preheat oven to 400°F. Grease a 9×13-inch baking pan with avocado oil.
  2. Melt butter in a skillet and add garlic.
  3. In a bowl, combine zucchini noodles, broccoli, mushrooms, and bell peppers. Toss with butter mixture.
  4. Transfer mixture to baking pan. Top with diced tomatoes, tomato sauce, oregano, salt, and pepper.
  5. Add basil leaves and top with mozzarella slices.
  6. Cover with foil and bake 20–30 minutes. Remove foil and bake an additional 15–30 minutes until cheese is bubbly.
