Zoodle Vegetable Bake
Ingredients
- 2 zucchini, spiralized into noodles
- Broccoli crown (florets)
- 10 sliced mushrooms or 5–6 large mushrooms
- 2 bell peppers, sliced
- 6–7 Campari tomatoes, quartered
- ¼ cup olive oil
- ½ cup butter
- 3 cloves garlic, minced
- ¼ cup tomato sauce
- Fresh basil leaves
- Mozzarella cheese slices
- Salt, pepper, oregano
Instructions
- Preheat oven to 400°F. Grease a 9×13-inch baking pan with avocado oil.
- Melt butter in a skillet and add garlic.
- In a bowl, combine zucchini noodles, broccoli, mushrooms, and bell peppers. Toss with butter mixture.
- Transfer mixture to baking pan. Top with diced tomatoes, tomato sauce, oregano, salt, and pepper.
- Add basil leaves and top with mozzarella slices.
- Cover with foil and bake 20–30 minutes. Remove foil and bake an additional 15–30 minutes until cheese is bubbly.
