Zucchini Cheddar Biscuits
Ingredients
- 1 1/2 cups shredded zucchini
- 2 cups flour
- 2 tbsp baking powder
- 1 tsp garlic powder
- 1 cup milk
- 1 egg
- 1/3 cup cold cubed butter
- 1/3 cup diced green onion
- 1 1/2 cups shredded cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Squeeze excess water from shredded zucchini using a kitchen towel. Salt lightly to help drain.
- In a bowl, combine flour, baking powder, salt, black pepper, red pepper flakes, and garlic powder.
- Cut butter into dry mixture until crumbs form.
- Mix in egg, milk, cheese, zucchini, and green onion.
- Drop spoonfuls of dough onto the baking sheet, spacing about 2 inches apart.
- Bake 20–25 minutes until golden and a toothpick comes out clean.
- Cool on a wire rack and enjoy warm.
