Zucchini Cheddar Biscuits

Ingredients

  • 1 1/2 cups shredded zucchini
  • 2 cups flour
  • 2 tbsp baking powder
  • 1 tsp garlic powder
  • 1 cup milk
  • 1 egg
  • 1/3 cup cold cubed butter
  • 1/3 cup diced green onion
  • 1 1/2 cups shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Squeeze excess water from shredded zucchini using a kitchen towel. Salt lightly to help drain.
  3. In a bowl, combine flour, baking powder, salt, black pepper, red pepper flakes, and garlic powder.
  4. Cut butter into dry mixture until crumbs form.
  5. Mix in egg, milk, cheese, zucchini, and green onion.
  6. Drop spoonfuls of dough onto the baking sheet, spacing about 2 inches apart.
  7. Bake 20–25 minutes until golden and a toothpick comes out clean.
  8. Cool on a wire rack and enjoy warm.
