Asparagus & Radishes with Mustard Vinaigrette

Ingredients

  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste

Mustard Vinaigrette

  • 2 tbsp grain mustard
  • 1 tbsp Dijon mustard
  • 2 tsp red wine vinegar
  • 1 garlic clove, minced
  • ¼ cup olive oil
  • 1 tsp honey (optional)
  • Salt/pepper

Instructions

  1. Preheat oven to 400°F.
  2. Place asparagus and radishes on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  4. Roast for 20–25 minutes, turning once halfway through, until the vegetables are tender and starting to brown.
  5. While vegetables roast, prepare vinaigrette: whisk together the mustards, red wine vinegar, garlic, olive oil, and honey. Season to taste with salt and black pepper. Whisk until fully emulsified.
  6. Remove vegetables from the oven and transfer to a serving platter. Drizzle with vinaigrette and serve.
