Asparagus & Radishes with Mustard Vinaigrette
Ingredients
- 1 bunch asparagus, trimmed
- 1 bunch radishes, trimmed and halved
- 2 tbsp olive oil
- Salt and pepper to taste
Mustard Vinaigrette
- 2 tbsp grain mustard
- 1 tbsp Dijon mustard
- 2 tsp red wine vinegar
- 1 garlic clove, minced
- ¼ cup olive oil
- 1 tsp honey (optional)
- Salt/pepper
Instructions
- Preheat oven to 400°F.
- Place asparagus and radishes on a baking sheet.
- Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Roast for 20–25 minutes, turning once halfway through, until the vegetables are tender and starting to brown.
- While vegetables roast, prepare vinaigrette: whisk together the mustards, red wine vinegar, garlic, olive oil, and honey. Season to taste with salt and black pepper. Whisk until fully emulsified.
- Remove vegetables from the oven and transfer to a serving platter. Drizzle with vinaigrette and serve.
