Blackberry Rolls
Ingredients
Dough
- 1¼ cup warm water
- 1 tbsp active dry yeast
- ¼ cup sugar
- ⅓ cup oil
- ½ tsp salt
- 3–3¼ cups flour
- 1 egg
Filling
- 3½ cups blackberries (fresh or frozen)
- ½ cup sugar
- 2½ tbsp cornstarch
- ⅛ tsp salt
Frosting
- Betty Crocker Cream Cheese Frosting
- (plus ¼ cup reserved filling)
Instructions
- Combine the filling ingredients. Cook over medium heat for 5–7 minutes, stirring often, until thickened. Remove from heat and let cool. Set aside ¼ cup for frosting.
- Mix warm water, yeast, and sugar. Let sit 5–10 minutes until frothy.
- Whisk together the oil, egg, and salt. Stir into the yeast mixture.
- Add flour gradually, one cup at a time, until a soft dough forms.
- Knead on a floured surface for 5–8 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise 1–1.5 hours.
- Punch down dough and roll it into a rectangle. Spread filling evenly.
- Roll tightly into a log. Slice into 12 rolls.
- Place rolls in a greased pan. Cover and rise 30 minutes.
- Bake at 350°F for 25–30 minutes. Cool slightly.
- Mix the reserved filling with the frosting.
- Spread frosting over the warm rolls and serve!
