Blackberry Rolls

Ingredients

Dough

  • 1¼ cup warm water
  • 1 tbsp active dry yeast
  • ¼ cup sugar
  • ⅓ cup oil
  • ½ tsp salt
  • 3–3¼ cups flour
  • 1 egg

Filling

  • 3½ cups blackberries (fresh or frozen)
  • ½ cup sugar
  • 2½ tbsp cornstarch
  • ⅛ tsp salt

Frosting

  • Betty Crocker Cream Cheese Frosting
  • (plus ¼ cup reserved filling)

Instructions

  1. Combine the filling ingredients. Cook over medium heat for 5–7 minutes, stirring often, until thickened. Remove from heat and let cool. Set aside ¼ cup for frosting.
  2. Mix warm water, yeast, and sugar. Let sit 5–10 minutes until frothy.
  3. Whisk together the oil, egg, and salt. Stir into the yeast mixture.
  4. Add flour gradually, one cup at a time, until a soft dough forms.
  5. Knead on a floured surface for 5–8 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let rise 1–1.5 hours.
  7. Punch down dough and roll it into a rectangle. Spread filling evenly.
  8. Roll tightly into a log. Slice into 12 rolls.
  9. Place rolls in a greased pan. Cover and rise 30 minutes.
  10. Bake at 350°F for 25–30 minutes. Cool slightly.
  11. Mix the reserved filling with the frosting.
  12. Spread frosting over the warm rolls and serve!
