Greek Tomato Fritters
Ingredients
- 4 medium ripe tomatoes, grated or finely chopped
- 1 cup all‑purpose flour
- 1/2 cup feta, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- Olive oil for frying
Instructions
- Grate or finely chop the tomatoes. Drain excess juice to avoid soggy fritters.
- Combine the flour, baking powder, salt, and pepper.
- Add tomatoes, feta, parsley, and dill to the flour mix. Combine well.
- Add the eggs into the mixture and stir until everything is evenly coated. The batter should be thick but manageable.
- In a frying pan, heat about 1/4 inch of oil over medium heat.
- Scoop small portions of the batter and form them into patties.
- Place 3–4 fritters at a time into the hot oil, ensuring you don’t overcrowd the pan.
- Fry 3–4 minutes on each side, or until golden brown.
- Once cooked, transfer the fritters to a paper towel to drain excess oil.
