Greek Tomato Fritters

Ingredients

  • 4 medium ripe tomatoes, grated or finely chopped
  • 1 cup all‑purpose flour
  • 1/2 cup feta, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • Olive oil for frying

Instructions

  1. Grate or finely chop the tomatoes. Drain excess juice to avoid soggy fritters.
  2. Combine the flour, baking powder, salt, and pepper.
  3. Add tomatoes, feta, parsley, and dill to the flour mix. Combine well.
  4. Add the eggs into the mixture and stir until everything is evenly coated. The batter should be thick but manageable.
  5. In a frying pan, heat about 1/4 inch of oil over medium heat.
  6. Scoop small portions of the batter and form them into patties.
  7. Place 3–4 fritters at a time into the hot oil, ensuring you don’t overcrowd the pan.
  8. Fry 3–4 minutes on each side, or until golden brown.
  9. Once cooked, transfer the fritters to a paper towel to drain excess oil.
