Hungarian Potato Goulash

Ingredients

  • 2 lb potatoes, peeled and sliced
  • 3 cups chicken stock
  • ¼ cup chopped parsley
  • 1 lb sausage of your choice
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion
  • 2 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp paprika
  • 1 tbsp smoked paprika

Instructions

  1. Heat 1 tbsp olive oil in a large pan over medium heat. Add sausage medallions and cook 5–7 minutes. Remove and set aside.
  2. In the same pan, add butter and remaining olive oil. Add sliced onions and cook until caramelized.
  3. Add minced garlic and seasonings. Stir in potatoes.
  4. Add chicken stock, ensuring potatoes are covered. Stir gently.
  5. Cover partially and simmer for 15 minutes, stirring occasionally.
  6. Uncover and simmer another 10 minutes until potatoes are tender and sauce thickens.
  7. Return sausage to the pan along with parsley. Stir gently.
  8. Serve warm, optionally with crusty bread.
