Hungarian Potato Goulash
Ingredients
- 2 lb potatoes, peeled and sliced
- 3 cups chicken stock
- ¼ cup chopped parsley
- 1 lb sausage of your choice
- 2 tbsp olive oil
- 2 tbsp butter
- 1 large onion
- 2 cloves garlic
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp paprika
- 1 tbsp smoked paprika
Instructions
- Heat 1 tbsp olive oil in a large pan over medium heat. Add sausage medallions and cook 5–7 minutes. Remove and set aside.
- In the same pan, add butter and remaining olive oil. Add sliced onions and cook until caramelized.
- Add minced garlic and seasonings. Stir in potatoes.
- Add chicken stock, ensuring potatoes are covered. Stir gently.
- Cover partially and simmer for 15 minutes, stirring occasionally.
- Uncover and simmer another 10 minutes until potatoes are tender and sauce thickens.
- Return sausage to the pan along with parsley. Stir gently.
- Serve warm, optionally with crusty bread.
