Spiced Cantaloupe Muffins
Ingredients
Dry Ingredients:
- 2/3 cup cantaloupe, grated
- 3 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp salt
Wet Ingredients:
- 3 large eggs
- 1 cup vegetable oil
- 1 cup sugar
- 3/4 cup sour cream
- 2 tsp vanilla extract
Topping:
- 1/3 cup sugar
- 1 tsp cinnamon
Instructions
- Grate about half a cantaloupe using a box grater and discard excess juice.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- In another bowl, whisk eggs, oil, sugar, sour cream, and vanilla until slightly frothy.
- Stir in the grated cantaloupe.
- Add the wet mixture to the dry mixture, folding gently until just combined.
- Scoop batter into muffin cups about 3/4 full. (Makes ~14 muffins; bake in two batches if needed.)
- Mix topping cinnamon and sugar together. Sprinkle over each muffin.
- Bake at 350°F for 20 minutes.
- Cool muffins for 10 minutes, then transfer to a rack.
