Spiced Cantaloupe Muffins

Ingredients

Dry Ingredients:

  • 2/3 cup cantaloupe, grated
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt

Wet Ingredients:

  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • 3/4 cup sour cream
  • 2 tsp vanilla extract

Topping:

  • 1/3 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Grate about half a cantaloupe using a box grater and discard excess juice.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In another bowl, whisk eggs, oil, sugar, sour cream, and vanilla until slightly frothy.
  4. Stir in the grated cantaloupe.
  5. Add the wet mixture to the dry mixture, folding gently until just combined.
  6. Scoop batter into muffin cups about 3/4 full. (Makes ~14 muffins; bake in two batches if needed.)
  7. Mix topping cinnamon and sugar together. Sprinkle over each muffin.
  8. Bake at 350°F for 20 minutes.
  9. Cool muffins for 10 minutes, then transfer to a rack.
