Green beans are one of the easiest and most rewarding vegetables to freeze. When preserved at their peak, they'll taste far fresher than most store-bought options and are ready to use straight from the freezer.

Before You Freeze

Fresh green beans keep best in the refrigerator, stored unwashed in a perforated bag or produce drawer. Try to use or preserve them within a few days of harvest or purchase for the best flavor and texture.

If beans are becoming limp or you're not going to use them in time, move them to the freezer before quality starts to decline.

Method

Wash the beans thoroughly and trim the stem ends. Leave them whole or cut them into bite-sized pieces, depending on how you'll use them later.

Blanch in boiling water for 3 minutes, then immediately transfer to an ice bath to stop the cooking process. Once cool, drain well and pat dry.

Spread the beans in a single layer on a baking sheet and freeze until firm. Transfer to freezer bags, remove as much air as possible, and label with the date.
