Baked Avocado Eggs

Ingredients

  • Eggs
  • Avocado — 1 per person
  • Salt & pepper
  • Shredded cheese
  • Bacon, crumbled

Instructions

Preheat the oven to 375°F. Cut the avocados in half, remove the pits, and scoop out a little extra flesh so the eggs can fit. If the halves wobble, trim a small slice off the bottom to help them sit flat, then place them in a baking dish.

Crack one egg into each avocado half, keeping the yolk intact. Season with salt and pepper. Bake for 12–15 minutes, or until the eggs reach your preferred doneness. If using cheese and bacon, sprinkle them on top and return to the oven for another 1–2 minutes. Let cool slightly, then finish with herbs, hot sauce, or any toppings you enjoy.
