French Onion Grilled Cheese
Ingredients
Caramelized Onions
- 2 tbsp unsalted butter
- 2 yellow onions, thinly sliced
- 1 tsp sugar
- 1/2 tsp salt
- Stock (vegetable, chicken, or beef) for deglazing
Sandwich Assembly
- 4 slices sourdough
- 1 tbsp Dijon mustard
- 1 cup grated Gruyère cheese
- 1/2 cup grated Swiss cheese
- 2 tbsp softened butter
- Black pepper to taste
Instructions
- Melt butter in a skillet over medium heat. Add onions, sugar, and salt. Cook, stirring often, until deeply caramelized, 20–25 minutes.
- Deglaze pan with stock, scraping up browned bits, and cook until liquid evaporates. Set aside.
- Spread Dijon on one side of each slice of bread.
- Add half the cheese to two slices, layer on the onions, season with black pepper, and top with the remaining cheese and bread.
- Butter the outside of each sandwich.
- Cook in a skillet over medium‑low heat until golden, crisp, and melted through, 3–4 minutes per side.
- Let rest briefly, then slice and serve.
