French Onion Grilled Cheese

Ingredients

Caramelized Onions

  • 2 tbsp unsalted butter
  • 2 yellow onions, thinly sliced
  • 1 tsp sugar
  • 1/2 tsp salt
  • Stock (vegetable, chicken, or beef) for deglazing

Sandwich Assembly

  • 4 slices sourdough
  • 1 tbsp Dijon mustard
  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Swiss cheese
  • 2 tbsp softened butter
  • Black pepper to taste

Instructions

  1. Melt butter in a skillet over medium heat. Add onions, sugar, and salt. Cook, stirring often, until deeply caramelized, 20–25 minutes.
  2. Deglaze pan with stock, scraping up browned bits, and cook until liquid evaporates. Set aside.
  3. Spread Dijon on one side of each slice of bread.
  4. Add half the cheese to two slices, layer on the onions, season with black pepper, and top with the remaining cheese and bread.
  5. Butter the outside of each sandwich.
  6. Cook in a skillet over medium‑low heat until golden, crisp, and melted through, 3–4 minutes per side.
  7. Let rest briefly, then slice and serve.
