Ginger & Carrot Soup
Ingredients
- 2 tbsp olive oil or butter
- 1 medium onion, chopped
- 1 tbsp fresh grated ginger
- 1 lb carrots, peeled and sliced
- 4 cups veggie or chicken broth
- Salt and pepper, to taste
- Optional: 1/2 cup coconut milk or cream
Instructions
- Heat oil or butter in a large pot over medium heat.
- Add onion and cook about 5 minutes until soft.
- Add ginger and carrots. Cook 2–3 minutes until fragrant.
- Pour in broth, season with salt and pepper, and bring to a boil.
- Reduce heat and simmer 20–25 minutes, until carrots are tender.
- Blend until smooth with an immersion or countertop blender.
- Stir in coconut milk or cream, if using.
- Taste and adjust seasoning.
