Ginger & Carrot Soup

Ingredients

  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 1 tbsp fresh grated ginger
  • 1 lb carrots, peeled and sliced
  • 4 cups veggie or chicken broth
  • Salt and pepper, to taste
  • Optional: 1/2 cup coconut milk or cream

Instructions

  1. Heat oil or butter in a large pot over medium heat.
  2. Add onion and cook about 5 minutes until soft.
  3. Add ginger and carrots. Cook 2–3 minutes until fragrant.
  4. Pour in broth, season with salt and pepper, and bring to a boil.
  5. Reduce heat and simmer 20–25 minutes, until carrots are tender.
  6. Blend until smooth with an immersion or countertop blender.
  7. Stir in coconut milk or cream, if using.
  8. Taste and adjust seasoning.
