Red Cabbage & Potato Skillet
Ingredients
- 1/2 head red cabbage, finely shredded
- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 1 apple, cored and sliced
- 2 tbsp oil
- Ground beef or beef strips
- 2 tbsp apple cider vinegar
- Salt and pepper, to taste
- Pinch of nutmeg
- 1 cup water
Instructions
- Heat oil in a large skillet over medium heat.
- Add onions and cook 3–4 minutes until translucent.
- Add beef and cook 5–7 minutes, breaking it up as it browns. Season with salt and pepper.
- Stir in cabbage.
- Add potatoes and apple, mixing well.
- Add vinegar and nutmeg. Pour in about 1 cup of water, or enough to come halfway up the mixture.
- Reduce heat to low, cover, and simmer 30–40 minutes, stirring occasionally, until potatoes and cabbage are tender.
- Taste and adjust seasoning. Add an extra splash of vinegar if you like more brightness.
