Red Cabbage & Potato Skillet

Ingredients

  • 1/2 head red cabbage, finely shredded
  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 1 apple, cored and sliced
  • 2 tbsp oil
  • Ground beef or beef strips
  • 2 tbsp apple cider vinegar
  • Salt and pepper, to taste
  • Pinch of nutmeg
  • 1 cup water

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add onions and cook 3–4 minutes until translucent.
  3. Add beef and cook 5–7 minutes, breaking it up as it browns. Season with salt and pepper.
  4. Stir in cabbage.
  5. Add potatoes and apple, mixing well.
  6. Add vinegar and nutmeg. Pour in about 1 cup of water, or enough to come halfway up the mixture.
  7. Reduce heat to low, cover, and simmer 30–40 minutes, stirring occasionally, until potatoes and cabbage are tender.
  8. Taste and adjust seasoning. Add an extra splash of vinegar if you like more brightness.
