Alfredo Zucchini Roll Ups
Ingredients
- 1 large thick zucchini
- 2 cups shredded chicken (rotisserie works great)
- 2 cups Alfredo sauce
- 1¼ cups shredded mozzarella
- ¼ cup shaved Parmesan
- 1 tsp parsley
Instructions
- Preheat oven to 375°F and spray a baking dish with cooking spray.
- Slice the zucchini lengthwise into ⅛‑inch thick slices (you’ll need about 12).
- Lay one zucchini slice flat. Add shredded chicken on top, then 1 tbsp Alfredo sauce.
- Roll tightly and place into the baking dish. Repeat with remaining slices.
- Pour remaining sauce over the rolls, then sprinkle with cheese.
- Bake for 25 minutes or until bubbly and the zucchini is tender.
- Let rest for 10 minutes before serving. Garnish with parsley.
