Alfredo Zucchini Roll Ups

Ingredients

  • 1 large thick zucchini
  • 2 cups shredded chicken (rotisserie works great)
  • 2 cups Alfredo sauce
  • 1¼ cups shredded mozzarella
  • ¼ cup shaved Parmesan
  • 1 tsp parsley

Instructions

  1. Preheat oven to 375°F and spray a baking dish with cooking spray.
  2. Slice the zucchini lengthwise into ⅛‑inch thick slices (you’ll need about 12).
  3. Lay one zucchini slice flat. Add shredded chicken on top, then 1 tbsp Alfredo sauce.
  4. Roll tightly and place into the baking dish. Repeat with remaining slices.
  5. Pour remaining sauce over the rolls, then sprinkle with cheese.
  6. Bake for 25 minutes or until bubbly and the zucchini is tender.
  7. Let rest for 10 minutes before serving. Garnish with parsley.
