Apple Cinnamon Scones

Ingredients

  • 2 cups flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 apple, peeled, cored, and finely chopped
  • ½ cup butter, cold and cubed
  • ½ cup heavy cream
  • 1 large egg
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all dry ingredients.
  3. Cut in the cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the wet ingredients. Add to the dry mixture and stir until combined.
  5. Fold in the chopped apple.
  6. Turn dough onto a lightly floured surface and knead gently.
  7. Pat into a 1‑inch‑thick circle and cut into 8 wedges.
  8. Place on baking sheet and bake for 15–20 minutes or until golden brown.
  9. Allow to cool slightly before serving.
