Carrot Cake Pancakes
Ingredients
- 1 cup all‑purpose flour
- 1 cup grated carrots
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 eggs
- 1 cup milk
- 1 tsp vanilla
- Cream cheese frosting, for serving
Instructions
- Whisk flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl.
- In another bowl, mix eggs, milk, and vanilla. Stir into dry ingredients; fold in carrots.
- Cook ¼‑cup portions on a greased skillet over medium heat until golden, flipping once.
- Serve warm with a dollop of cream cheese frosting.
