Carrot Cake Pancakes

Ingredients

  • 1 cup all‑purpose flour
  • 1 cup grated carrots
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • Cream cheese frosting, for serving

Instructions

  1. Whisk flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl.
  2. In another bowl, mix eggs, milk, and vanilla. Stir into dry ingredients; fold in carrots.
  3. Cook ¼‑cup portions on a greased skillet over medium heat until golden, flipping once.
  4. Serve warm with a dollop of cream cheese frosting.
